This 11″ Chef’s knife has been crafted from W2 steel. It has a differential heat treatment applied that allows the spine to be a softer metal than the very hardened edge. This edge is capable of holding an extremely sharp edge geometry under extended use. This knife is best suited for processing large pieces of boneless meats such whole tenderloins, ribeye’s, and prim ribs. The handle is constructed from a stabilized and dyed block of wood and aluminum bolster. Despite being a much larger blade and handle, it is well balanced and much lighter than it looks when handled correctly.
